The foundation of these pizzas is a distinctive 48-hour fermented sourdough, crafted from a special "00" flour and maintained at an 85% hydration level. This meticulous process results in a light, airy, and digestible crust, reflecting a dedication to both flavor and wellness.

The pizzas are then adorned with the finest ingredients, including hand-crushed fresh tomatoes, celebrated for their natural sweetness and vibrant flavor. Creamy Fior di Latte mozzarella, renowned for its delicate texture and mild taste, is carefully layered alongside fragrant basil leaves, adding a burst of aromatic freshness. Each pizza is then baked to perfection in a traditional 400°C pizza oven, achieving the hallmark Neapolitan crust: thin and tender in the center, with a beautifully puffed and slightly charred cornicione (the outer edge of a Napoletana pizza).
